Ultra-Creamy Cheddar Sauce

INGREDIENTS:

200g of grated cheddar cheese

20cl of thick, full-fat fresh cream

10cl of whole milk

1 tablespoon of unsalted butter from La Fromagerie

1 tablespoon of flour

Salt and pepper

1 teaspoon of paprika

1/2 teaspoon of mustard

 

PREPARATION:

- In a saucepan over medium heat, melt the butter gently

- Add the flour and mix vigorously with a whisk for 1 to 2 minutes to create a light roux.

- Gradually pour in the milk while whisking to avoid lumps forming. Let the sauce thicken slightly for a few minutes.

- Incorporate the fresh cream and mix until you obtain a smooth and homogeneous texture.

- Lower the heat to low and add the grated cheddar in small handfuls, stirring constantly until it is completely melted and the sauce is smooth.

Add the mustard, paprika, salt and pepper. Mix well and taste to adjust the seasoning to your liking.

Croque Monsieur with cheddar and eggs

INGREDIENTS:

Sliced bread

2 Eggs

Cheddar

Salted butter

Salt and pepper

PREPARATION:

In a non-stick pan, crack the two eggs and cook them over medium heat, scraping the eggs constantly until scrambled. Be careful not to overcook them, or they will become too dry. Set aside.

- Butter both slices of bread on one side only. Place the first slice in the pan, buttered side down, and add a slice of cheddar cheese.

- Add the eggs

- Add another slice of cheddar

- Add the last slice of bread with the butter facing up

Cook on each side for a few minutes until the bread is golden brown.

Tuna patties with cheddar cheese

INGREDIENTS:

1 onion

Parsley

Mustard

Salt / Pepper

Frying oil

1 Can of tuna

1 clove of garlic

1/2 lemon juice

1 egg

Cheddar

Breadcrumbs

PREPARATION:

-In a bowl, combine the onion, garlic, parsley, mustard, egg, tuna, cheddar cheese, lemon juice, and breadcrumbs. Season with salt and pepper, and mix well.

- Form 4 or 6 small patties with the mixture obtained.

- In a frying pan, pour 2 cm of frying oil and cook the patties for 2 minutes on each side over medium heat until golden brown.

- Absorb the excess grease on paper.

- For the sauce, mix all the ingredients together in a bowl.
