Goat Crottin

Warm Goat Cheese (Crottin) on Toast
INGREDIENTS:
Salad and toppings of your choice (bacon lardons, apples, etc.)
2 crottins of goat cheese
4 slices of bread
1 lemon
Olive oil
Honey
Salt & pepper

PREPARATION:
- Preheat the oven to 180°C (350°F) on the grill/broil setting.
- Wash and drain the salad.
- In a bowl, mix the olive oil and lemon juice. Season with salt and pepper.
- Cut the crottins in half. Spread one teaspoon of honey on each slice of bread and place half a crottin on top.
- Line a baking tray with parchment paper. Place the slices of bread on it.
- Bake on the top rack of the oven for 2 to 3 minutes.
- Season the salad and arrange it on a serving dish. Place the cheese toasts on top.
Breaded Goat Cheese Crottins
INGREDIENTS:
3 goat cheese crottins
1 beaten egg
Breadcrumbs
Garlic powder
Oregano
Pepper

PREPARATION:​
- Beat the egg in a shallow bowl.
- In a separate plate with the breadcrumbs, add 1/2 teaspoon of garlic powder, 1/2 teaspoon of oregano, and a few turns of freshly ground pepper.
- Mix well.
- Dip a crottin into the beaten egg, then coat it in the seasoned breadcrumbs.
- Repeat the process one more time (double coating).
- Fry in a hot pan with a drizzle of oil until golden.


Fried Goat Cheese Crottin with Prosciutto
INGREDIENTS:
6 goat cheese crottins
12 slices of prosciutto (dry-cured ham)
1 egg
Breadcrumbs
Frying oil

PREPARATION:
- Cut strips of ham the same width as the goat cheese crottins.
- Wrap each crottin in one strip of ham, then in a second slice to fully cover it.
- Dip each crottin into the beaten egg.
- Then coat in breadcrumbs.
- Deep-fry the crottins in hot oil.
- Drain on paper towels once they are golden brown.
